A cousin of the flashy Golden Chanterelle, the Hedgehog has a similar taste -- sweet and nutty -- with a little more of that traditional, meaty mushroom texture, and a lot less of the Chanterelle's fruity aroma. In the culinary world, the two are frequently considered interchangeable, but most agree that the Hedgehog is way less pretentious.
